Vegan MoFo: Arugula Pesto and "Provolone" Mac



It's Mac & Cheese Monday again, folks!

In the mood for something that looks and tastes super-fancy, but is a cinch to prepare? Pesto is a dish that will always impress and provolone is a flavor of vegan cheese that is new and intriguing. The combination of the two satisfies the cravings for creamy, salty, garlicky, carby... with a dash of healthy greens added in for good measure.

Served with a colorful salad and a glass of vino, you’ll have a meal fit for a nice, fancy evening.




Arugula Pesto and “Provolone” Mac

8 oz. prepared brown rice pasta
1/2-3/4 c arugula pesto (recipe below)
3 slices Daiya Provolone Style Slices

Arugula Pesto
3-4 c arugula
1/4 c olive oil
juice of 1/2 lemon
1 tsp garlic powder or 1-2 crushed garlic cloves
2 tsp dried basil or 1/3 c fresh basil
salt and pepper to taste

Prepare the pesto and set aside. Prepare the pasta according to the directions. While the pasta is still hot, add in the Daiya cheese and pesto and mix until melted and creamy. Serve and enjoy!
