Takeout-Style Tofu & Veggie Fried Rice

Every once in a while, one gets a hankering for some greasy, lazy, super-salty convenience food (and by every once in a while, let's be serious, I mean all the timez). Instead of risking the dangerous sodium levels and cross-contamination with animal bits typical of conventional fast food, it's usually better to whip something quick and easy up at home. This week, my hankering was for some takeout-style fried rice - without the henstruation, please...

Turns out this dish was very simple to put together with some common, cheap kitchen staples. Having made a ridiculous amount of brown rice for two people, creativity needed to be implemented...

Enter some lightly pressed, cubed tofu...

A little bit of toasted sesame oil, tamari, minced ginger, and pressed garlic...

And an abundance of chopped carrots, red onion, and frozen peas, sautéed until tender, and BOOM! Takeout-style fried rice in a flash.
