BBQ Soy Curl & Ranch Slaw Bowl - An Homage

Be sure to enter the Veggie Grill free entree giveaway - it ends 6/19! (Psst, I won't judge my VVC friends for entering... this coupon is going to waste on the east coast!)

Have you ever been inspired by a dish so much that you wanted to create it at home? This especially happens for me after visiting or vacationing somewhere, knowing that I will not be back any time soon to savor the meal.

Being totally enamored by the concept of bowls, I found myself sampling some of the best in Portland during VVC 2013. I had wanted with all of my heart to make it back to Native Bowl for Julie's famous Mississippi Bowl... yet it just didn't happen! This had been my favorite meal of VVC I and my taste buds were very sad.

Not being able to get the M-bowl out of my mind - and having purchased a ready bag of soy curls during my stay - I had the compulsion to try and recreate a bit of the magic I had missed. The results were pretty tasty! Much different than my gustatory memory served, yet still complex in its own right.

Disclaimer: Just like with my Spicy PDX Bowl of Goodness, I only endorse the recreation of this dish if you are more than 50 miles away from Native Bowl. Otherwise, shut this shit off, hop in the car/on the bike and get over there!

Yummy BBQ Soy Curl & Ranch Slaw Bowl

1/2 package of soy curls, rehydrated and drained *well*
1-2 T oil for sautéing
1/3 c of your favorite BBQ sauce (I used Bone Suckin' Sauce & Frank's RedHot)
3 cups cooked rice of your choosing (I used brown)
3 cups broccoli slaw

Quick Ranch Dressing
(measurements approximate)
1/3 c raw cashews
1 T lemon juice
1 T apple cider vinegar
1/4 t oregano
1/4 t basil
1/4 t garlic powder
1/4 - 1/3 cups water
salt & pepper to taste

This is best with the cold slaw atop a warm bed of rice and curls - so if you're utilizing leftovers, store them separately so you can reheat your bottom ingredients. Enjoy!
